Dinner

(The purpose of this page is to be my personal recipe book. Thanks for humoring me.)

I'm not a picky eater. I am, however, a picky cook.

My favorite recipes take less than half an hour to whip up, use minimal pots and pans, include meat and veggies, and taste delicious enough that I'd want to eat leftovers for dayz and dayz. Also, I tend to have bad reactions to gluten and dairy (who doesn't?) so I prefer to keep those items to a minimum.

These are my tried-and-true favorite dinners I've made as a married women. It's a short list now because I'm only including the best stuff. Help a homegirl out and comment with a link to your very favorite dinner recipe. If it's the bee's knees, I'll add it.

DINNER

 Williams-Sonoma Chicken in Tarragon Sauce (This recipe changed my chicken-cooking life. Usually I put Jared in charge of cooking the chicken, but this turned out so perfect for me. And it was so simple. Make extra sauce!)

₪ Williams-Sonoma Mexican Lime Soup (So good! For optimal tastiness, add cilantro and corn tortilla chips. You could probably make this even easier by using meat from a rotisserie chicken.)

₪ One Pan Sausage Tortellini (Make sure to brown the sausages whole before you slice them up.)

₪ Minestrone Soup (I tried this in the crockpot once. Bad! Don't do that! And keep the noodles separate so they don't get soggy in the leftovers. But this is a really healthy recipe we love.)

₪ Korean Beef (I used dried ginger instead of fresh. A little sprinkle of dried ginger goes a long way in the realm of spiciness.)

₪ Lasagna Soup (This was a favorite when I was living a Paleo lifestyle. I still make it without the noodles. And without the Ricotta--but that's just personal preference.)

₪ 7 Can Chicken Enchilada Soup (I love this mostly because prep-to-eating time is 5 minutes. I consider avocado, lime tortilla chips, and cheese to be mandatory toppings. It's also great with sour cream on top and a can of beans in the soup.)

 Pancit (This is a Filipino dish that you must try if you like veggies. It's full of health and . . . culture? Rice noodles are so different and so easy to make. I like to add lemon juice to the recipe at the end when I'm tossing everything together.)

Carb Buster Breakfast (I know it says breakfast, but you should probably just eat this all day long. You'll feel like a champ.)

Zesty Quinoa Salad (Jared and I made quinoa salad together all the time when we were dating, and this is the very best one.)


OTHER STUFF

₪ Braided Pesto Bread (You guys. I don't even like to bake, but this is so easy and so worth it. This is the tastiest, easiest, beautifulest bread you will ever bake.)
